Revisiting our Favorite ☼ Summer ☼ Recipes! | Video & Recipe Links! |

Hello friends! I hope you are getting along well today. I can't believe how fast summer showed up for us. It seems like yesterday when I was complaining about the cold weather and now here we are in the middle of the summer! I thought today I would take you back through some of my older recipes that I have already shared on my youtube channel and this blog. There are new people subscribing everyday who don't know about these recipes...who don't want to hunt through playlists for something new to make their family. So with that in mind, here are some of my tried and true family summer recipes! ( Direct links to each is below! ) Hope you enjoy.

Hello friends. Back to doing some late night posting! I guess it's better than not posting at all. Tonight I am back sharing another What's Cookin' Video sharing our daily meals vlog style. I take you into the kitchen with me and share some of the prep and cooking with our dinners. I hope this gives you some new dinner ideas for your own families. Hope you enjoy! 


As you could see, many meals are fast and easy to make. I just don't want to spend all my time in the kitchen cooking each night. I want to feed my family something they will enjoy that is somewhat healthy without hours of work. I didn't have any complaints this past week which means they actually enjoyed all the dinners! Hello friends! I hope you are having a great night. I am sorry this video is going live a little bit later. I just didn't get around to editing and uploading until the evening hours. :) This past week a lot of the meals I made served for 2 dinners or lunch a few times. We also ate out Friday and Saturday....and today I made a family dinner that the boys really seemed to love. If you need some menu inspiration or dinner ideas, hopefully this video will help! Hello friends. I hope you are having an amazing night. I am sorry this is going up so late but who cares really!? I normally try to have these vlogs up every Sunday but sometimes I just don't cook. We do left overs, we have snack night sometimes...and sometimes we eat out. So here is a hodge podge of our meals. Hope you enjoy! 


In sharing these food vlogs I not only share each meal but I share a a lot of the prep and cooking before hand to give you an idea of how to make it. Late night hello to you all! I know the clock is getting ready to strike midnight but I wanted to go on and get this video up...being the blog email goes out every morning. :) So here is a new What's Cookin' video sharing our daily meals. Please know, I don't always want to be in the kitchen and I don't mind taking a little help from the store. Some nights it's a challenge to get something on the table and with Scott's late hours, it's also been a challenge to find meals that will be good at 10pm or super fast to make. We also ate out a few nights....which you will see in the video below. Hope you enjoy.

I know so many of you guys really like these videos. I didn't cook a lot the week I was sick so this video is actually our meals over the last 2 weeks that I cooked. Hello friends! I hope you are having a great evening. I totally love love love weekend evenings when the sun is out longer where we can enjoy time outside instead of being stuck in the house. It's such a beautiful evening here in South Carolina. I wish I had all you guys here in my backyard enjoying a bbq with us! Speaking of food, I am actually back sharing our latest What's Cookin' video where I share our daily meals vlog style. Asian Inspired Meal: Video | Beef & Broccoli with Homemade Pork Pot Stickers |

Hello friends! I hope you are having a wonderful Thursday. I am tossing a new unexpected video into the line up today! I was going to include this meal in our What's Cookin' Video on Sunday but it was just too long and too much footage to really show you how I made our Asian inspired dinner featuring beef and broccoli and homemade pork pot stickers. There is a little more prep with these meals so it's best if you make it on a night when it's not so busy. I show you everything in the video and the full recipes are below. I hope you enjoy! 


This was such a delicious dinner. I know many of you don't have all the ingredients to make this but if you invest in a few delicious Asian condiments you can make this full meal along with many others. It's totally worth it! I didn't have to go to any special store either. All the ingredients were at my local grocery store and was easy to find. The wonton wrappers were in the produce area and the rest in the international food isle. Here are the recipes in full....* and remember you can print them out! 

Beef and Broccoli Stir Fry

Beef Marinade:

1 pound steak ( I used Sirloin but you could use flank steak as well) , cut across the grain into 1/8 thin slices, then cut into 2” length pieces
1 tablespoon hoisin sauce
3 tablespoons soy sauce
1 teaspoon Sriracha/hot Asian chili sauce
2 teaspoons cornstarch
½ teaspoon garlic powder
½ teaspoon ginger powder

Sauce
1 tablespoon Chinese rice wine
2 tablespoons chicken broth
5 tablespoons oyster sauce
3 tablespoons brown sugar
1 teaspoon sesame oil
2 teaspoons cornstarch
½ teaspoon salt
½ teaspoon pepper

6 medium garlic cloves, minced
1 tablespoon ginger, minced
¼ teaspoon red pepper flakes
1 teaspoon peanut oil

3 ½ - 4 cups broccoli florets, cut into bit size pieces
1/4 cup water
3 medium scallions, sliced (optional)


INSTRUCTIONS

::Pour marinade ingredients directly into freezer bag and mix well. Add beef and massage in marinade until well covered. Refrigerate for 2-8 hours.

:: To make Beef and Broccoli, whisk the sauce ingredients together in a small bowl.

:: In another small bowl, combine garlic, ginger, red pepper flakes and 1 teaspoon peanut oil ( I actually used coconut oil which worked great! ) Set aside.

:: Drain excess marinade off of beef (if there is any).

::Heat 1 1/2 teaspoons peanut oil in a large nonstick skillet over high heat until very hot and sizzling. Add beef to the skillet and break up any clumps; cook without stirring for 1 minute, then stir and cook until beef is browned and almost cooked through, about 1-2 minutes (it will cook more in the sauce). Don’t overcook or it won’t be as tender! Transfer beef to a large plate and cover. *If your skillet is small, then cook in 2 batches.

:: Add 1 tablespoon peanut oil to the now-empty skillet; heat until very hot and sizzling. Add the broccoli and saute for 30 seconds. Add water, cover pan, and lower heat to medium. Steam broccoli until crisp-tender, about 2 minutes.
Push the broccoli to the sides of the skillet and add the garlic/ginger/red pepper/oil to the center of the pan, mashing the mixture with a spoon, until fragrant, about 15 to 20 seconds, then stir the mixture into the broccoli.

:: Return the beef to the skillet and toss to combine. Whisk the sauce to recombine then add to the skillet. Cook, stirring constantly, until the sauce is thickened and beef is cooked through, about 1-2 minutes. 

:: Transfer to a serving platter, sprinkle with the scallions and sesame seeds and serve.



Homemade Pork Pot Stickers

INGREDIENTS

1 pound ground pork
1 cup shredded green cabbage
2 cloves garlic, pressed
2 green onions, thinly sliced
1 tablespoon hoisin
1 tablespoon freshly grated ginger
2 teaspoons sesame oil
1 teaspoon Sriracha*, or more, to taste
1/4 teaspoon white pepper
36 2-inch won ton wrappers
2 tablespoons vegetable oil
Soy sauce, for serving




:: In a large bowl, combine pork, cabbage, garlic, green onions, hoisin, ginger, sesame oil, Sriracha and white pepper.
:: To make the dumplings, place wrappers on a work surface. Spoon 1 tablespoon of the pork mixture into the center of each wrapper. Using your finger, rub the edges of the wrappers with water. Fold the dough over the filling to create a half-moon shape, pinching the edges to seal.
:: There are a few ways to cook these...you can steam for about 4 minutes in a basket lined with parchemnet paper, you can boil them in water for around 4 minutes, or you can fry them in a little vegetable oil for about 3 minutes per side. 
:: Serve immediately with soy sauce, if desired.

Easy & Delicious Crockpot Beef Taco Stack Recipe! | Video |

Hello friends! I hope you are having a lovely day. I am back sharing a family favorite recipe that is super simple to make. I show you everything in the video..this is a meal that you can either start it on the stove and make it a little faster or you can totally do it all in the crockpot....either which way, it's delicious! I have the directions below for either which way you want to make it! Hope you enjoy!



This is such a easy family friendly dinner that I am sure your family is going to love! Here's how to make it...

Ingredients:

1 lb. Beef Cube steak ( or even ground beef works just as well ) 
1 yellow onion diced 
1 (10-oz.) can mild red enchilada sauce
2 cups shredded cheese(I use finely shredded packaged Mexican blend cheddar)
1 can re fried beans 
Package of corn tortillas
Velveeta Queso Cheese Sauce

Instructions:

I cooked the beef and onion on the stove before assembling the taco stack in the crockpot but if you choose to do it all in the slow cooker, heres how"

Add the chopped up beef and onion to the crockpot. Add in the can of mild enchilada sauce and cook on LOW for 8 hours.Place all the sauce and meat into a medium-sized bowl. Set aside.

The layers:

Place a ½ cup of the reserved sauce and meat onto the bottom of the crockpot.

A tortilla next.
1/4 cup sauce/meat.
1/4 cup cheese 
Another tortilla.

Keep doing layers of sauce/meat and cheese then a tortilla, until all the mixture is gone. Add the remaining sauce, then on top of the last tortilla, I like to add a couple packs of the Velveeta Cheese Sauce over the top. Allow it to go down the sides and cook for 1 hour on high. 

Serve it up with sour cream, salsa, avocado and whatever else you like! Enjoy! ( Btw..I did say whipped cream in the video when my mouth and brain didn't match up! It's sour cream of course! )

Amazing Raspberry & White Chocolate Crockpot Oatmeal Recipe! | Video |

Hello friends! I hope you are having a great night. I thought I would take a few minutes to share this amazing crockpot Raspberry & White Chocolate Crockpot Oatmeal recipe. This is perfect for any cold winter morning when you want breakfast without a lot of hassle or kitchen work. This recipe is so yummy and easy to make. Everything you need to know is in the video! Hope you enjoy.



I like to double this recipe but this is just the standard version.. double it if needed! 

For the Oatmeal:
1 cup  steel cut oats
4 cups of water
1/2 cup milk 
2 cups of your favorite dried or fresh fruit.  ( fresh raspberries are my favorite! ) 
1/4 cup of sugar
1 Teaspoon Vanilla
pinch of salt

For the topping: 

Fresh Raspberries
White Chocolate or Dark Chocolate Chips

Directions:

Combine all the ingredients in the crockpot. Cover and let cook on low for 8 -10 hours. 
Stir and serve with the fresh raspberries and chocolate chips!

Hello friends! I hope you all are staying warm. I have been watching the news and shocked at how much snow the upper east coast is getting. Thank goodness we are just a little bit further down so we are experiencing cold weather but nothing like that. So if you are jammed up in the house and need something to do why not check out our latest daily meals. This videos are to encourage you to menu plan, help inspire you with maybe different meals than what you normally make and I show them in vlog style so you can actually see me cooking. So sit back and have a watch! :) 


I didn't have as many dinners in this video as before just because we were traveling and I am serving leftovers when I can. A lot of times I make more with the intentions of having it again....maybe in a different kind of way later in the week. It gives me a break from the kitchen and stops us from wasting so much food.
