Hello friends! I hope you are having a lovely evening! I have been asked a lot of questions about the herb garden I have in my kitchen, that I thought I would share with you my replanting of the current herbs I have along with a few new. I also include some tips at the end of the video to show you a few ways you can store your herbs that maybe come from a seasonal outdoor herb garden or maybe even some herbs you bought at your local grocery store. I hope this video encourages you to maybe buy one herb that you like to cook with and then maybe you will get another!

Hello friends! I hope you are having a beautiful day. Speaking of beautiful days....spring has been knocking on our door here in South Carolina! I do have to admit... we had some rain yesterday which cooled things down a bit but its still beautiful. Anyway, yesterday I went ahead and did my first round of garden shopping for spring/summer 2014. It was a lot of fun and who doesn't love pretty flowers!? I absolutely love tomatoes.. so much so that I have a ton of plants in the garden giving us a great amount of different kinds of tomatoes.. from black tomatoes, to little cherry ones, to big boy tomatoes.. I mean massive amounts just waiting on us to eat them up. Even with giving the neighbors some,  having some with dinner nightly, we have a huge abundance of them right now. 

So I have been on the hunt of recipes to use these yummy veggie up and today I came across this one that I can't wait to try! I will do a post with step by step pictures but I wanted to get this recipe posted first! 

Heirloom Tomato Pie

Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup yellow cornmeal
  • 3/4 teaspoon fine salt
  • 1 stick cold unsalted butter, cut into 1/2-inch pieces
  • 3/4 cup plus 3 tablespoons shredded manchego cheese
  • 2 tablespoons extra-virgin olive oil
  • 1 large onion, thinly sliced
  • 2 1/4 pounds mixed heirloom tomatoes
  • Kosher salt
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup mayonnaise
  • 3 tablespoons breadcrumbs
  • 3 tablespoons chopped fresh chives
  • 3 tablespoons chopped fresh parsley
  • 1 teaspoon chopped fresh thyme
  • Freshly ground pepper

Directions

Make the crust: Pulse the flour, cornmeal and fine salt in a food processor to combine. Add the butter and 3 tablespoons manchego; pulse until the mixture looks like coarse meal with pea-size bits of butter. Drizzle in 4 tablespoons ice water and pulse until the dough comes together; add 1 more tablespoon ice water if necessary. Turn out onto a sheet of plastic wrap and pat into a disk. Wrap and refrigerate until firm, about 45 minutes.
Put the dough between 2 sheets of parchment paper and roll into a 13-inch round. Transfer the dough to a 9 1/2-inch deep-dish pie plate. Fold the overhang under itself and crimp the edges. Pierce the bottom of the crust all over with a fork. Refrigerate until firm, about 20 minutes. Meanwhile, preheat the oven to 350 degrees F.
Line the crust with foil, then fill with dried beans. Bake until the edges are golden, about 20 minutes. Remove the foil and beans and continue baking until golden all over, 10 to 15 more minutes. Transfer to a rack to cool.
Make the filling: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the onion and cook, stirring, until golden, about 15 minutes. Let cool. Meanwhile, thinly slice the tomatoes; toss with 1 teaspoon kosher salt in a colander. Let drain, gently tossing occasionally, about 30 minutes.
Increase the oven temperature to 375 degrees F. Combine the remaining 3/4 cup manchego, the mozzarella, mayonnaise, breadcrumbs, 2 tablespoons each chives and parsley, the thyme, 1/4 teaspoon each kosher salt and pepper, and the sauteed onion in a bowl. Spread in the crust. Arrange the tomatoes on top. Drizzle with the remaining 1 tablespoon olive oil and season with pepper. Bake until the tomatoes are browned, about 50 minutes. Top with the remaining 1 tablespoon each chives and parsley.

Is that not an adorable picture? I walked into my bathroom and saw these too on the bar stool that I sit on to apply make up. I about died at how cute they were so quickly got my phone and snapped a few pictures! Look at how much bigger Romeo is that Willow and he's not even 5 months old yet! He is going to be freaking HUGE!

Together

Hello.. How are you tonight!? Its been a easy night around the for most part. However, husby  did come home and want me to call and find out where his phone is at. Its a huge mess since we are both having phone issues. It took over an hour on the phone with them to get it fixed.. It sucked.. I had my husband griping and complaining in one ear and the guy trying to fix things in the other ear. They think that problem was the shipping department not understanding the orders. I will be super happy when he gets his phone so he will stop bitching. He doesn't like the blackberry. I do think the blackberry is a better phone but I like the Samsung better too. So I understand. Hes just been using it until the other phone comes in. Hopefully this mess gets all straightened out by the weekend.

I didn't think at the begnning of the day that I would accomplish anything today. I was feeling so lazy and comfy in the house . It was just one of those days when it was hard to get out of the bed. We all had a late start. I come down and go straight to the coffee part and today.. it wasn't do a damn thing to help energize me!!!

Before I knew it, all the rain that was suppose to come tomorrow showed up early. We got a big storm. It came on fast and strong. I kept doubting that it was really going to rain because the reports had nothing about it.. one drop came .. then many more followed!

Our Sunday.. In Pictures!!

Hello everyone! Hope you had a beautiful Sunday with your friends and family!! Around our house today, things went really good! Scott got up to play golf.. and I was lucky enough to be able to sleep in till 11:00am.. THANK YOU JACKSON!! When I came downstairs, both of my kids were


hanging out in the living room with their laptops and being quiet.. I couldn't believe it! The living room was a little bit of a mess but nothing that I couldn't get cleaned up in a hurry.

Garden Tip - Growing more Peppers!! -

As you guys know.. I am growing peppers out in a container on the back deck.. Here they are.. from last week but 


this week they have blooms on them! I will post updated pictures later tonight or tomorrow for you! 

Check out this article from  The Baltimore Sun on how to help your green pepper produce more fruit. A solution made of Epsom salts and warm water gives the pepper plant a boost of magnesium that is required at the flowering stage to produce more peppers! How awesome of a tip is that! 

Dissolve 1 teaspoon of Epsom salts in 4 cups of warm water then pour into a spray bottle. Spray the plant with this mixture, again 10 days later and in a few weeks.

Great tip for those of you with pepper plants, I can't wait to see how this works.. and being mine is blooming right now.. this tip comes at the perfect time!

Yesterday was a very busy day for us around here. We were in and out and here and there.. but we finally made it home and got some gardening done! A couple of days ago I did fertilize everything with Miracle Grow.. I wanted to make my own.. that I showed you in this Post... but I forgot to keep buying everything I needed to make it! So I just bought some regular old Miracle grow. I don't really like the ones you hook to the hose.. because you end up fertilizing all kinds of things.. from the grass to the weeds.. I prefer mixing it up in a watering can and just going from plant to plant. It does make a little extra work when you have a lot of plants to do.. but I think it works best rather wasting all that expensive fertizler.

I have been so busy around here with gardening. I love being outdoors, and I love the house looking pretty too! Its been a rainy few days so I haven't been able to get out and weed and tinker around but there were a few glimpses of sunshine here and there.. allowing me to plant a few more plants!

Going Green in the Garden!! - Garden Update -

I haven't been able to get out in the garden much this week due to the rain. But I did go out today and make sure everything is looking good. The basil looks like it has been ate up a little bit. but everything seems to be growing and doing just fine!

 
With gardening season here in North Carolina, I have been going up and down the isles at Walmart trying to figure out all the stuff I need. There are so many chemical solutions available to help with fertilizing, feeding, and protecting your garden plants. Plant food and fertilizers can sell for as much as $5.00 a pound! Not to mention the fact that the thought of dumping chemicals on my tomatoes and herbs is not very appealing.
I am wainting to try to find easy and simple.. and cheap ways to garden.  Here are a couple simple and inexpensive home remedies to help keep your garden looking (and tasting) its very best. Most of the ingredients can be found right in your kitchen!


Basic Plant Food:
  • 1 teaspoon baking powder.
  • 1 teaspoon epsom salts.
  • 1 teaspoon ammonia.
Mix ingredients together in a gallon of room temperature water. Store the solution in an airtight, labeled container. Use it once every 4 to 6 weeks, or even less if your plants are happy!


Simple Pesticide:
  • 1 minced garlic clove.
  • 1 cup warm water.
  • 3-4 drops of dish soap.
Mix the three ingredients together and pour into a labeled spray bottle. Spray generously on plants, both edible and non edible. Bugs will find this mixture repulsive (as will any vampires buzzing about your garden) and will leave your plants alone.


Safe and Effective Weed Killer:
  • 1 gallon of distilled vinegar.
  • 1 cup of salt.
  • 1 tablespoon of liquid dish soap.
Mix the ingredients and pour into a labeled spray bottle. Spray directly on weeds in the garden or pour directly into cracks of walks and driveways. Repeat as needed.

All of these mixtures are safe to use around children and pets and can be stored and used throughout the summer. To make larger batches of any of these recipes, just double the measurements! So this summer, skip the harsh chemicals and costly fertilizers. Mix up your own batches instead and save!
