So the other night, I made on of husbys favorite meals..
Smothered Chicken..
So here is how I make this dinner..
You guys know by now, unless I am baking.. I don't really use measurements...but if you follow along with the pictures and directions.. it will be a breeze to make!
First off, I am just using a chicken that is already cut up for me.
I like to soak it in salt water as long as I can. The night before is best but this time it only soaked for a couple hours.
The left over neck, back, heart, and livers are for the cats. I just boil these and then tear the meat from the bone and cut it all up for them.
Fresh green beans with bacon, shallots, and garlic..
and smashed red potatoes.
Rinse the chicken and remove it to a
plastic cutting board and
Pat dry.
I took some flour, garlic powder, salt and pepper, mixed it up in a shallow dish and set aside.
Then I heated up
some plain old vegetable oil
over med heat.
While that was heating up I
Then I took 1 egg and about 1/4 cup of milk.
Mixed it up..
and then I dipped in the chicken in the egg wash mixture..
Into the flour and then I put it right back on the
plastic cutting board to dry for a minute or two.
Repeat with all the chicken.
After all has its first coating..
do it all over again with each piece.
You want a thick coating so
really push it on it!
and into the oil it goes..
Cook over med heat until you get some good color on the chicken.
Flip it over and continue to cook for about 15 minutes. Turn down the heat to med low and cook it in batches. As it finishes cooking put the chicken in a
casserole in the oven on about 200... to keep warm and continue to cook the rest of the way through.
While I was cooking the chicken in batches I started preparing my veggies for dinner.
I think fresh green beans are the best. and I don' really like snapping the ends off. Instead,
I cut them off.
Once those were done, I piled them up and started on the
garlic and shallot. I used 2 shallots and about 4 cloves of fresh garlic.
I then cut up some bacon that will be added to the green beans.
Once everything was done
was done for the green beans I started with the
red potatoes.
I just quartered them up to boil. Easy stuff.
And both the green beans and red potatoes will give you a little more practice with your knife.
Add the potatoes to a pot and boil till tender.
For the green beans I started with
adding some olive oil to the skillet..
Then add your bacon and cook up.
The bacon has a little grease to it but not enough
to cook the onion and garlic. After the bacon is cooked up add the garlic and shallot. and cook till tender. Then I added the green beans and about a cup of chicken stock and cooked for about 10-15 minutes.
While that was cooking..
I got packets of this pre made brown gravy.
( why not take some help from the store for this!?)
Follow the packet directions.
Once its thickened up.. pour it over the chicken..
leave it in the oven till everything is done.
I also picked up a loaf of bread..
that went right into the first shelf of the
oven to warm.
In the mean time,
smashed up the potatoes..
Then dinner was served..
Super good dinner.. Husby loves this meal..
And then I had some
of these cookies on hand and decided to try them out.
Again.. why not take some help from the store!?
These have mint chips in them.
On the
cookie sheet and in the oven they went!
and I served them up to the guys..
None of us was too sure about what we thought of these. I think we all agreed that regular old chocolate chip cookies were better!
This was a great dinner.. and everyone went to bed that night with really full bellies!
