Whats on the Menu - Chicken Spaghetti - step by step -

Last night we had a really good chicken spaghetti.. Its a pretty dish that freezes great and you can switch up the ingredients.. 

Here is how I make it!


This is all I use for the recipe.. 


2 split chicken breast


Spaghetti, any kind would work - I am using a really healthy low carb pasta -


2 cans of cream of chicken.. You could also switch this up for cream of mushroom. 


Bell Pepper - you could use a fresh red or green but I prefer roasted red peppers because they taste so sweet.  Also 1/2 of a large onion. 


I am using a steak seasoning, garlic powder, salt & pepper


and some mild cheddar cheese - any kind would work - 

Wash the chicken off and put in a large pot.. 


bring to a boil


While the chicken is cooking 


Get everything else done. 


Finely dice up the onions and pepper. 


And break up the pasta. 

Cook the chicken till its fork tender.. about 45 minutes.. 


Once cooked, remove it to a cutting board


to cool. 

Then take out about a cup of the 


liquid chicken stock from where the chicken was cooking.. 

Then add the pasta to the same pot you cooked the chicken in. 


If you don't have enough liquid for the pasta, add some box chicken stock or water. 

Once the chicken has cooled down break it apart. 


You could either use your fingers or 2 forks.. or even a knife. 

Add the chicken to a big bowl..


Then add the onion and pepper.. 


Next add in the cans of the Cream of Chicken soup


and mix! 


Once the pasta is finished cooking ( should be al dente.. you don't want mushy pasta! ) 


drain it right into the 


bowl with the chicken mixture. 


Stir.. 

If it seems a little too thick 


add some of the chicken broth you reserved. Being you took the pasta from the pot to the bowl, you won't need that much chicken broth.. I think I used about 1/2 a cup. 

Also you could mix some extra cheese into it now if you want it extra cheesy.. but I just add cheese to the top.. 

Once its really mixed up.. 


add the mixture to a sprayed casserole dish..

Cover the top with cheese


and bake in a 350 oven for 35 minutes.. 


Serve it with a simple salad and you will have a wonderful comforting dinner! 



I served it with wedge salad.. Which was just a big wedge of iceberg lettuce with a few diced tomatoes and dressing.. which my husband LOVES..


I think its a pretty dinner too! 

The kitty cats were going crazy at dinner time.. Check out Gabby begging.. 


It worked.. husby gave her a few bites.. 

This pasta was a great dinner.. 


To me the cheese on top is the perfect amount! 

This meal would also be great if you had some left over chicken or spaghetti or even turkey! You could also add some fresh mushrooms or any seasonings you want. Its a very versatile dish. 

The boys ate it up!
