Last night we had Scott's boss over for dinner. I wasn't really in the mood to entertain but I just got busy and went with it anyway. It actually turned out pretty nice. The weather was nice enough that we could eat out on the patio and enjoy the beautiful evening.

For dinner I was making the pleasing Bruschetta Chicken dinner that is super easy to make..
I first collected some fresh herbs from the garden and got started!
On the left is green onions, then towards the front is basil, in the back is parsley and in front of that is the thyme.
For the chicken I wanted to get the tomatoes done first..
I diced up both the red and yellow tomato and then
Julienned the basil up.
To add a little more flavor I used a couple tablespoons
some Balsamic Vinaigrette Dressing.
I also butterflied the
chicken breasts so they would cook a little faster.
I decided to make super easy butter and parsley.. can't get easier than that!
So I washed them up
and go them ready to boil.
In the meantime I got the chicken breast on
the indoor grill. I was going to grill outside but didn't realize I was out of charcoal until it was too late!
I grilled up the chicken, added a piece of provolone cheese and then added the tomatoes and basil on top of the gooey cheese
Once the potatoes were tender I drained them.. cut them in half and
smothered them in butter and fresh parsley.
I also went easy with the veggie.. I opted for some frozen
sugar snap peas that were pretty much the hit of dinner!
I also served a sun dried tomato loaf of bread that was also really good.. sorry I forgot to get a picture of it!
We had a really nice dinner outside
and afterwards we had some yummy chocolate silk pie that husby got on his way home. Again.. sorry for the forgotten picture but it was really good..
We just sat around talking
and playing with the animals
And enjoying how beautiful the evening was.
Its so nice to have friends over for a nice meal! I would post pictures of his boss but I don't have his permission to do that and the last thing I want to do is piss off husby's boss!
We love the patio and I plan on spending a lot more time out here enjoying the summer!
