Last night I couldn't decide what to do for dinner so I just went into the kitchen and started pulling things out.. We have a lot of steak right now and I am trying to come up with different ways to cook it..
Here's what I made..
I started out by making some caramelized onion.. Just thinly slice a big sweet yellow onion. Heat up olive oil and butter in skillet.. Add the onions.. Cook over medium heat for about 10 minutes.. Then add about a tablespoon of sugar and cook on low for another 20 minutes.
I then took 1 large Rib eye..
Trimmed as much of the fat off of it.
Then..
I cut it in long strips..
I cheated with the potatoes.. I nuked them.. I find the inside of the potato is just as good as baking it but the skin isn't near as good.. But for this meal.. this works!
I then decided to make a summer cucumber and tomato salad..
I used a Roasted Garlic Italian Vinaigrette.. Just poured a good amount of it over the salad and let it sit while I got everything else ready..
I sauteed the steak on very high meat for about 4 minutes..
I poured a bit of steak marinade in the skillet at the last minute to make it nice and juicy..
I served the steak over the onions..
And dinner was served..
With a yummy salad..
Scott loved the cucumber and tomato salad.. He ate his entire plate before touching his other food!
This meal turned out really good and it was super fast and easy.. If you don't like onions you can always leave them out!
