EASY POTATO SOUP 101

~ THIS RECIPE CAN BE MADE INTO SMALLER BATCHES WITH LESS POTATOES AND HALF AN ONION..



I AM JUST USING IDAHO POTATOES AND A SWEET YELLOW ONION..

PEEL AND DICE UP POTATOES AND ONIONS..



THEN TRANSFER TO A LARGE SOUP POT.


ADD WATER TO JUST COVER THE POTATOES..



BRING TO A BOIL..


IN THE MEAN TIME I LIKE TO COOK UP A POUND OF CHOPPED BACON..


ONCE POTATOES COOK TO TENDER, I ADD MILK..NO MEASUREMENTS.. I JUST FILL THE REST OF THE POT UP..


THEN SEASON WITH SALT AND PEPPER..

( TASTE IT..SEE IF IT NEEDS MORE SALT )


I ADD ABOUT A TABLESPOON OF GARLIC POWDER..


I THEN TAKE 1 PACKET OF INSTANT POTATOES AND..


STIR INTO SOUP ALONG WITH 1 STICK OF BUTTER..


ALLOW IT TO FINISH COOKING ON LOW..



I SAT THE SOUP OUT WITH THE  TOPPINGS AND SOME FRESH DINNER ROLLS

AND..

IT WAS SERVE YOURSELF DINNER..

PERFECT FOR A COLD DAY!

THIS RECIPE SERVES 6.
