OLD FASHION BANANA PUDDING
3/4 CUP PLUS 1 Tbsp SUGAR
1/3 CUP CORNSTARCH
PINCH OF SALT
8 EGGS SEPARATED - WHITES AND YOLKS IN SEPARATE BOWLS
1 Tbsp PURE VANILLA EXTRACT
3 Tbsp BUTTER
3 CUPS VANILLA WAFERS
4 RIPE BANANAS ~ THINLY SLICED
1/2 tsp CREAM OF TARTER
1. PREHEAT OVEN TO 350. IN A LARGE SAUCEPAN, COMBINE 1/3 CUP OF SUGAR, CORN STARCH AND SALT..STIR UNTIL BLENDED. MIX IN MIL. COOK CUSTARD OVER MEDIUM HEAT, STIRRING CONSTANTLY UNTIL THICKENED AND BOILING; BOIL 1 MINUTE AND REMOVE FROM HEAT.
2. IN A SMALL BOWL, WHISK EGG YOLKS, THEN WHICH IN ABOUT 1/2 CUP OF THE HOT CUSTARD UNTIL BLENDED. POUR YOLK MIXTURE BACK INTO SAUCEPAN OF CUSTARD AND COOK OVER MEDIUM HEAT WHILE STIRRING FOR 2 MINUTES. STIR IN VANILLA AND BUTTER UNTIL BLENDED. SIT ASIDE.
3. PLACE VANILLA WAFERS IN BOTTOM OF A SHALLOW CASSEROLE DISH. THEN ADD ANOTHER LAYER OF THE SLICED BANANAS AND THEN TOP WITH A LAYER OF THE CUSTARD. REPEAT LAYERING ENDING WITH CUSTARD.
4. IN A LARGE MIXING BOWL, BEAT THE EGG WHITES AND 1/4 SUGAR UNTIL FOAMY. ADD CREAM OF TARTER, INCREASE SPEED TO MEDIUM AND GRADUALLY BEAT INT HE REMAINING SUGAR. BEAT UNTIL EGG WHITES HOLD STIFF PEAKS.
5. SPOON MERINGUE OVER HOT CUSTARD IMMEDIATELY, MAKING SURE THAT MERINGUE TOUCHES THE BAKING DISH ON ALL SIDES. ( THIS PREVENTS IT FROM SHRINKING). TRANSFER TO OVEN AND BACK UNTIL GOLDEN, ABOUT 20 MINUTES. REMOVE PUDDING FROM OVEN AND COOL 1 HOUR. REFRIGERATE AT LEAST 4 HOURS BEFORE SERVING..
MAKES 8 SERVINGS.
INSTEAD OF MAKING 1 BIG BANANA PUDDING I DECIDED TO MAKE MANY LITTLE ONES THAT SCOTT CAN TAKE TO WORK. THIS IS JUST ONE TRAY OF MANY..I MADE A TRIPLE BATCH!

~ I DID HAVE A LOT MORE PICTURES ON MY CAMERA BUT IT GOT BROKE WHILE I WAS MAKING THIS DESSERT. SO PLEASE BEAR WITH THE GRAINY PICTURES FROM MY PHONE!! SORRY.. THIS IS A SUPER EASY RECIPE WITH ONLY 10 INDGREDIENTS AND 5 STEPS. ANYONE SHOULD BE ABLE TO MAKE THIS! IF YOU ARE IN A SUPER FAST HURRY YOU COULD USE INSTANT BANANA PUDDING MIX FOR THE CUSTARD. IT WOULD WORK FINE IN EITHER VANILLA OR BANANA CREAM.
