Delicious Easy Summer Lobster Rolls Recipe!

Hello friends! I am back with my summer recipe for a simple yet very delicious lobster rolls. Now I did use a entire lobster per person but I would have totally used fresh lobster that is already out of the shell. Sometimes you can find it back in the fish area of your market but I want the real thing...nothing intimation. This is so easy to make and very very good. Its not so kid friendly but its perfect for any adult dinner or brunch served with a cold glass of white wine. For 2 Lobster Rolls: 

2 (1 1/2-pound) cooked lobsters or 1 1/2 cups of  lobster meat
4 Tablespoons mayonnaise
1 tablespoons freshly squeezed lemon juice
1 tablespoons chopped dill or fresh parsley leaves
1/2 fresh avocado
1 cup cooked crumbled bacon
Salt and freshly ground black pepper
4 rolls, split and lightly toasted
2 tablespoons room temperature butter

Brown your rolls first. Just add 1 tablespoon of butter to a skillet, add rolls or buns and brown. Remove to a plate and allow to cool. 

Then remove the meat from the lobsters, chopping any large chunks into bite-size pieces. In a bowl, combine the lobster meat, mayonnaise, lemon juice, dill, and salt and pepper to taste. Dice up the avocado...add it to the lobster salad along with the bacon. Mix well. Refrigerate for a few minutes if possible and serve on  

Add lettuce to your bread and top with the lobster salad and enjoy!
