Hello friends! I hope you are having a wonderful Thursday! I am here to share with you my Grandma's Breakfast Cookie Recipe. This is such a great cookie with the banana and oatmeal for the kids to grab and run right out the door. They are super super easy to make and bake in about 15 minutes. You could whip these up any week night with very little cleanup. If you want to see how I make these yummy treats, enjoy the video below. 4 tablespoons unsalted butter, at room temperature
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
2 teaspoon vanilla extract
1 large egg
2 large banana, mashed
1 ¼ cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups old fashioned oats
1 cup semisweet chocolate chips
Directions:
In a large bowl mix everything together but the chocolate chips. Mix well until all the batter becomes moist and well incorporated. Slowly stir in the chocolate chips.
Using a cookie scoop drop cookie dough 2 inches apart onto parchment lined baking sheets. Bake at 350 degrees F for 15-18 minutes or until golden. I just move the parchment paper off the cookie sheets onto the counter to let the cookies cool. Put in an air tight container and enjoy!
