I saw this tonight and it took me wayyy back to culinary school!! =) And I had to share it with you!
You are wasting so much valuable potato using a peeler or knife!

Instead, try this..
After boiling the potato, put into cold water for 5 minutes. Twist the potato skin off with your hands — it should come right off.
Should make things a bit easier using this technique!
