Whats on the Menu.. Bruschetta Chicken

Hello! As you can see I am starting to catch up on a few posts today! Over the weekend we made this meal and I wanted to share it because its a great chicken recipe! I have posted it before but this time I made it on the outside grill. Super Easy and Delicious!

Bruschetta and cheese Chicken Breast
Baked potatoes
Fresh Green beans with bacon and onions
Bread

and a peach pie for dessert!

The potatoes went into the oven for about 45 minutes at 425 till fork tender. Then I got started on the rest of the dinner.

Cut some bacon up..


Fry it up with about 1/2 cup of diced onions


Get the green beans ready.. just cut off the ends..or snap them off!

Add to the skillet with the bacon and onions and add about 1 cup either beef or chicken broth. I am using beef.

Cover and allow to cook for about 15 minutes.

In the mean time

Grill up some chicken..


I added a Balsamic Glaze.. this is a new love of mine right now.. Thanks Courtney! =)


Yuummmmm!! Keep basting with the glaze until the chicken is cooked.

Then add a slice of provolone cheese to each chicken breast. Then I added some bruschetta mix that I have shown often.. You can find it in your pasta isle pre made or make yourself.. Its simply just tomatoes with seasonings.. I love using orange and red tomatoes and basil and Italian seasoning to make it fresh..

And dinner was plated up and served.


Michael and Scott really loved it and ate it up!
