The night before dad came in we kinda had a Mexican Fajita Party with a couple of our friends.. It was on Wednesday and we didn't have a lot of time.. This meal was easy.. fast.. and soooo good!
I first cut up my red bell peppers and 1 onion. I am cooking all this seperate so everyone can build their own fajita with what they want on it.
Little olive oil in a hot skillet and cook the peppers until they are tender..
About 10 minutes on medium heat..
I then took some chicken and diced it up pretty small...Remember you should not do this on wood..It should be on plastic..and either clean your knife well or get another one for the rest of the cooking.
Spread out some re fried beans on a plate..
In the meantime.. I finished cooking the pepers and onions.. I cooked the onions in the same skillet as the peppers and just added a little olive oil.. I also put a tablespoon of sugar with the onions to really make them good and cooked for about 15 - 20 minutes on low heat.
I put the onions and peppers on plates and put them in the microwave to stay warm while i got everything else done.
Chicken went in and cooked
until it got some good color on it and then I added the fajita seasoning and a bit of water and then it was time to serve it up!
I also warmed the tortillas in the microwave for a couple of minutes..
I sat everything out on the bar and everyone helped themselves..
I melted cheese over the beans..
onions and
peppers are sat out..
Chicken is out..
Salsa and Queso is out..
Tomatoes, lettuce, guacamole, and sour cream are out.
And we all ate it up!
What a great meal...Its not only great because people can build their own giving you more time to hang out and because they taste GREAT!!!
