Yummy Raspberry Shortbread Cookies ~ Step by Step ~

I wasn't really wanting to bake today even though I had to.. So I didn't set everything out. I didn't have my mis en place! But.. I did take pictures step by step!

First off.. here's the recipe..




Raspberry Shortbread Thumbprints.

Ingredients
  • 1 cup butter, softened
  • 2/3 cup white sugar
  • 1/2 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/2 cup seedless raspberry jam
  • 1/2 cup confectioners' sugar
  • 3/4 teaspoon almond extract
  • 1 teaspoon milk

Directions


Heat oven to 350

In a medium bowl, cream together butter and white sugar until smooth. Mix in 1/2 teaspoon almond extract.


Mix in flour until dough comes together.


Roll dough into 1 1/2 inch balls, and place on ungreased cookie sheets. Make a small hole in the center of each ball, using your thumb and finger, and fill the hole with preserves.


Bake for 14 to 18 minutes in 350 preheated oven, or until lightly browned. Let cool 1 minute on the cookie sheet.


In a medium bowl, mix together the confectioners' sugar, 3/4 teaspoon almond extract, and milk until smooth.


Drizzle lightly over warm cookies.

I made a double batch of these, so keep that in mind when looking at the pictures.


Take the butter...


add sugar and


mix till they are creamed together..

Add the flour..


1 cup at a time


mix well. Then add


the almond extract

Mix 


until dough comes together.

I got 3


cookie sheets lined in parchment paper. These cookies are jellied filled so its best to have something that will be easy clean up if they bubble over any.

Again.. using my handy dandy


cookie scooper. If you don't have one of these.. GO GET ONE!! They come in all sizes and make everything so much easier!


Got them all scooped out on the parchment paper..


then using my CLEAN hands, took my thumb and pressed down on the cookie..


so you have a little place for the jelly.


I had a ton to do!

Then took


my raspberry jelly


and spooned it into the cookies.

I baked them at 350


for about 15 minutes

About 1/2 through, I checked on the cookies. I could see that they needed more jelly. So I got them out of the oven, added more.. and put them back in to finish cooking. Be sure to check.. you might have to do this too!

Once they were done, I let them cool long enough


to make the icing.. Super easy.. directions are above!!

Then I used my little


to whisk to drizzle the icing over the cookies.

Got them all done.
Got them bagged up but still have to put each of the little yummy bags in each tin.

But I had some left over that


I just had to keep. I know I will have to make more of these for the family before Christmas. They are just so good so getting more supplies tomorrow!

Super easy.. and these cookies are DELICIOUS!!!
