Hello friends! I hope you are having a great afternoon! I am back today with a dinner recipe that will surely knock your socks off. This BBQ Chicken is one of the best ever and not difficult to make! I served it up with a side dish of baked cauliflower that is both healthy and delicious! Ingredients:
2 pounds boneless, skinless breasts
2 teaspoons kosher salt
1 1/2 tablespoons sweet paprika
2 teaspoons smoked paprika
4 teaspoons sugar
2-3 slices raw bacon, cut into 1/2-inch pieces
Your favorite BBQ sauce
Instructions:
1. Cut the chicken into 1-inch cubes.
2. In a large bowl, toss the chicken with the salt. Then cover with plastic wrap and refrigerate for at least 30 minutes and up to 1 hour.
3. Heat your grill. You can use gas but I like charcoal. Don't add a ton of coals and let it burn down a lot to reduce the temperature. Also if you are using wood skewers, be sure to soak them first.
4. Pat the chicken dry with paper towels.
5. In a small bowl, combine the paprikas and sugar.
6. Place the raw bacon in a food processor and pulse for about 30-45 seconds, until a smooth paste forms.
7. Mix with hands or spatula until the ingredients are blended and chicken is coated.
8.Thread the chicken onto the skewers.
9. Grill the chicken with the lid turned for about 5 minutes.
10. Flip the kebabs and brush with BBQ sauce; flip.
11. cook until sauce is browned in spots, about 1 minute.
12.Brush second side with sauce; flip and cook for another minute or so, until cooked through.
13.Remove kebabs from grill and let rest for 5 minutes.
14. Enjoy!
Ingredients:
1 large head cauliflower
1/2 cup seasoned bread crumbs
3-4 tablespoons grated Parmesan cheese
1/4 cup margarine, melted
pinch garlic powder
Pinch of salt
pinch red pepper flakes
pinch dried oregano
Instructions:
1. Clean cauliflower, and trim off leaves and any brown spots.
2. Place the whole head of cauliflower into a steamer basket, place the basket in a large pot, and add one inch of water.
3.Cover, and bring to a boil over medium heat. Cook for about 20 minutes or until tender.
4. Preheat the oven to 375 degrees F (190 degrees C).
5. In a medium bowl, mix together the bread crumbs, Parmesan cheese, melted margarine. Season with garlic powder, salt, red pepper flakes, and oregano, and mix well.
6. Place the head of cauliflower into a baking dish, and coat with the breadcrumb mixture.Bake for about 10 to 15 minutes in the preheated oven, or until golden brown. I like to use the broiler in the last couple of minutes to really brown it up.
