If you were to ask my son what he would like for dinner.. 99% of the time, he would tell you breakfast. And lets face it... breakfast is normally easy and fast to make so its on the menu a lot around here!!
Last nights dinner was simple.. yet very yummy and comforting..
At Home Eggs
& Sausage Biscuits
Served w/ Home
Fries
It took very few items to make.. You could make your own homemade from scratch biscuits but I didn't want to go through all that for a fast dinner..
I also bought some premade sausage patties for convince.. but again.. you can get a roll of sausage that you can pat out yourself.
First thing I did was dice up the potatoes and 1/2 an onion.
and into a hot cast iron skillet they went!
I just let them cook over med heat covered while I got the rest of the stuff ready. In the cast iron I used a few tablespoons of vegetable oil and a couple spats of butter.. Be sure flip the potatoes around from time to time to prevent sticking.
I cooked up the sausage first and
just flatted them out a little bit.
and sat aside...
Then I got busy on the eggs..
Here is a handy tip!
To make those round shaped egg patties for any breakfast sandwich.. I use..
canning lids. I have a ton of these and they work so well..
Just spray them with non stick spray.. put them flat in your non stick skillet..
and drop an egg in each one!
I like to take a fork and break the yolk for a sandwich.. Allow it to cook about 2 or 3 minutes then
gently remove the lid with a pair of tongs
and you have a perfectly round egg!
Flip it over and cook on the other side for a minute or so
Then I put the little sandwiches together..
The potatoes cooked until tender.. I seasoned them up with some garlic powder and salt & pepper.
and dinner was served!
I served it up with..
because we all like jelly on our sausage & egg biscuits..
Along with some yummy
chocolate milk!
This was the perfect late night dinner..
And both the boys loved it!
