Easter Dinner!!

I hope you all had a great Easter weekend. I doesn't matter what is going on, who is here or who isn't here we don't pass up Easter dinner. It was much easier this year with just 3 of us, which I did totally appreciate!!

The night before, I got the salad dressing made... I shared that recipe here


Its pretty simple though..

3/4 cups Olive Oil Or Canola Oil
Juice Of 2 Lemons
4 Tablespoons Grated Parmesan Cheese
1/4 teaspoon Salt, More To Taste
Freshly Ground Black Pepper
1/4 teaspoon Sugar
Dash Of Paprika
1 clove Garlic - Peeled And Left Whole

Preparation Instructions

Place all ingredients into a jar. Shake it up and store in the fridge at least 24 hours before serving.

The early afternoon of Sunday  got busy with the pineapple upside down cake..

Super easy..


4 tablespoons butter 3/4 cup brown sugar packed

Preheat oven to 35o. In a small sauce pan or microwaveable glass bowl add the butter and brown
sugar, heat until just ready to boil, set aside and mix the cake batter.


1 yellow or white box cake mix.. mix as directed.

Get the pan ready.. I just buttered and floured it..  You can use non-stick spray but it tends to stick.


Pour the brown sugar mixture in the bottom of the bundt pan, place cherries on top of brown
sugar mixture then top with pineapple..

Finish by pouring the prepared cake mix over the top.

Bake for about 40 minutes or until golden brown. Carefully invert cake immediately onto
serving platter being careful not to burn yourself


I like to go around it with a

a knife to keep it from sticking..

I just put the cake platter over the bunt pan..


and turned it over.. with oven mits..


And carefully remove the top..


And look at the pretty cake!!

Then I got the ham ready..


I normally don't buy this type of ham..with a bone but husby got this one so I just went with it. I went ahead and sliced it up before it went into the oven.. Yea.. not so happy with his pick but we made it work!

Then it just went into the oven..then I got the potatoes ready..

and for the green beans I cheated..

These Allen Green Beans that are SEASONED are the best!! Super good.. and all you have to do is warm them up!

I got the


ready and in the oven..

Before long the ham came out..


and look at how good it looked. I just basted it with a thick mixture of brown sugar and butter.. and wooooo- la!


Soon after dinner was on the table..


I made a very simple salad.. with only diced cucumbers, tomatoes, and thinly sliced onions.

I think I was very happy about this yummy looking salad


Dinner was served!!
