I was wondering through the isels at my local Walmart and then cookie isle just pulled me in. While I adore my double stuffed Oreo's; I am always on the hunt for a good cookie to have with my tea.

Carr's international lines of cookies and biscuits have been popular since the British Industrial Revolution when Jonathan Carr decided to open his own bakery in Carlisle England in the year 1831. Customers came from all over the area to buy his biscuits and other baked goods once word spread about how good they were. As the business grew so did his reputation and popularity, so much so, that, in just 10 years of being in business, he was given the Queen Victoria's Royal Warrant. This is considered quite an honor and one that has been awarded to Carr's since that first time by the British Royals.
Each one has two ginger cookies with a delicious, generous lemon cream filling in between each ginger layer. The pairing of the spicy ginger and the tart lemon is just a perfect combination for any cookie lover. They even have a wonderful aroma as you open the box to pop one into your mouth. The texture of creamy filling and crisp wafer is just perfection.
These little cookies are amazing. I don't even like lemon that much but these cookies were so good when I dipped them into my tea.. Yea, not exactly how you should drink hot tea but I did it anyway! Then another evening I dipped them in some milk.. and oh my.. I was in heaven!
