Afternoon!!

Last night we had a really simple meal that was delicious!



Grilled Pork Chops served over wilted lettuce, roasted potatoes, but I switched out the peas for corn.. and I decided to add mac n' cheese too!

I was drinking

some wine from the Biltmore Estates so I am hit and miss with the pictures. Normally this is a 30 minute meal but it ended up taking me a lot longer!


I took some bone in pork chops and marinated them up with some good Italian salad dressing...


On a big platter I took some spring mix and halved cherry tomatoes and


added a little more of that Italian dressing right to the salad..

Mixed and

sat aside.

The potatoes went into the oven to roast.. if you don't know how to make these you can click HERE to see step by step instructions.

I got the chops on


the indoor grill. It took about 15 minutes for them to cook fully..

Once the potatoes were done,


I took some


fresh Parmesan and coated the potatoes.

These are soooo good!

And after a long time in the kitchen,


Dinner was served..


I put the hot pork chops over the lettuce and it wilts it.. The salad dressing gives it a bit of a tangy taste. I love it. I love the warm lettuce. Husby doesn't like it as much as I do but try it.. its really good!

a side of sweet corn..

By time we all sat down for dinner last night


we were starving. So everything tasted even better!
