It was a long day yesterday with husby home in the late afternoon. We had ate out for the entire weekend and Monday I didn't cook.. instead we snacked for dinner. So last night, I had to make something.. and something good!
I had a skirt steak in the freezer so I thawed it out
and got started. I decided that since we had been running all over town I would just use what we had in the house for dinner.
I only had some russet potatoes and 1/2 a big onion so that's what I used..
I quartered the potatoes and left the skin on and chopped up the onion.
For the potatoes I used simple seasonings and spices..
Olive Oil
Garlic Powder
Salt
Pepper
Dried Thyme
I just added the potatoes to a cookie sheet..
Drizzled Olive Oil over them..
Then sprinkled on some garlic powder
salt and
pepper.
I then added a bunch of thyme.
And used my had to just mix it all up together.
and in the oven they went at
450. I like to put them on the bottom rack so they get a little more crispy!
Then I got busy making a couple
small salads.
I normally don't put the salad on my dinner plate but last night I was going for fast and easy!
Once the potatoes were cooking I got the skirt steak on the indoor grill.
I let the grill heat up on med high for a couple minutes before laying the skirt steak down.
I put the marinated side down first and then added a little more marinade to the back side. You can marinate the entire thing but I was in a hurry! So I just did one side and did the other side after it went on the grill.
Continue cooking.. This is a rather thick piece of meat.. I like it med rare so I got good
color and markings on it and then turned
it down to medium to allow it to cook slower.
While the steak is cooking..
Stir the potatoes and I also like to add a few
pats of butter when they are almost done..
for more flavor. It will take about 30 minutes for these to cook and crisp up. Just keep tossing them around every few minutes.
Once the skirt steak was done,
I removed it to the cutting board and let it sit for a few minutes.
Then sliced it up..
I warmed up some corn with a little butter, salt and pinch of sugar and dinner was served!!
It was rather easy and fast.. and the
food was amazing. If you are serving a lot of people and maybe can't afford big steaks for everyone this is a great alternative. This steak can be flavored in any way and always taste amazing!! And its cheaper!
