I made this a while ago but I am just getting it up!
This is one of the best ways to make a roasted chicken..
First rinse it really well with cold water..
Pat it dry with some clean paper towels.
Ok.. This is really simple.. First off I am only using some potatoes, garlic, and onion along with the whole fryer.
I am using a large cast iron skillet that use to be my mother in laws.. I like it because its deep and it distributes the heat very well. If you don't have one of these just find something that is good sized that is oven proof..
I rinsed the potatoes.. Sliced them up thinly and added them to the cast iron skillet.
I salted and peppered them.
I also added some steak seasoning to the potatoes to season them up a bit more!
To me .. that already looks good!
Then I sliced up some onions and layered them right on top of the potatoes.
I roughly chopped up some fresh garlic.. 3 cloves
added it right on the top. You don't want mix this up.. everything is layered.. It gives the potatoes more heat and gives the garlic a bed to lay in.
Right on top of that.. some butter slices.
Then I poured in about 1 1/2 cups of chicken stock.
In the mean time.. I added some butter under the skin on the breast..
Next I drizzled it in olive oil.
Rubbed it around..
I also kinda pressed down the butter a little bit.
Next I added the salt and pepper..
Then sprinkled about a tablespoon of Thyme over the bird..
And in the oven it went..
450 for about 2 1/2 hours.
I like the skin on the chicken a little more crisp that most people..
If it starts looking too dark for you.. just cover it up in tin foil.
Got it plated up..
And dinner was served..
Forgot that I served it with green beans and warm bread.. Those potatoes are amazing!!! Really the entire meal was great!
