LETS GET CRACKLING!!!

THIS IS THE STEP BY STEP INSTRUCTIONS FOR THE BEST COOKIES EVER..IF YOU NEED THE RECIPE CLICK HERE..

LETS GET STARTED!





HERE IS WHAT WE ARE GOING TO MAKE..



FIRST THINGS FIRST..I KNOW A LOT OF PEOPLE DONT DO THIS BUT THE FRENCH CALLED THIS MISE EN PLACE...WHICH MEANS EVERYTHING IN PLACE AND SET UP..ALL INDGREDIENTS MEASURED AND READY TO GO..I DONT ALWAYS DO THIS IN COOKING BUT I SURE DO IN BAKING..IT TAKES A LITTLE TIME BUT ITS BETTER TO TAKE THE TIME TO MAKE SURE ALL INDGREDIENTS ARE MEASURED RIGHT AND WAITING FOR USE..


FOR THIS RECIPE YOU NEED 8 OZ OF BITTER SWEET CHOCOLATE ANDI AM USING GHIRADELLI WHICH IS THE BEST YOU CAN BUY IN THE GROCERY STORE..HOWEVER IF YOU NEED TO SAVE A LITTLE BIT...NORMAL CHOCLATE CHIPS WOULD WORK TOO..


BACK LEFT...1 1/4 CUPS ALL PURPOSE FLOUR
BACK RIGHT..1 1/2 CUPS LIGHT BROWN SUGAR, FIRMLY PACKED
FRONT LEFT.. 1/3 CUP WHOLE MILK
FRONT RIGHT..1/2 COCOA POWDER


1 STICK OF BUTTER AT RM TEMP..AND 1/4 TEASPOON SALT


1 CUP GRANULATED SUGAR
1 CUP CONFECTIONERS ( POWDER ) SUGAR


2 EGGS, 2 TEASPOONS BAKING POWDER AND 1 TEASPOON VANILLA EXTRACT..
( I DIDNT REALIZE I WAS OUT OF VANILLA EXTRACT SO I AM JUST USING A FRESH WHOLE VANILLA BEAN )


IF YOU ARE USING CHOCOLATE BARS YOU WILL NEED TO ROUGHLY CHOP IT UP..IF YOU ARE USING CHIPS YOU WONT HAVE TO.


PUT THE CHOCOLATE IN A MICROWAVE SAFE BOWL..( YOU CAN USE A DOUBLE BROILER IF YOU WANT BUT I THINK THE MICROWAVE WORKS JUST FINE! )



START MELTING THE CHOCOLATE AT 25 SECOND INTERVALS..



AND STIR WELL AT THE END OF EACH CYCLE..

POP IT BACK IN IF NEEDED


AND STIR IT AGAIN..


MAKE SURE THERE ARE NO CHOCLATE PIECES LEFT..STIR WELL..


AND SIT IT ASIDE TO COOL..



THEN I WENT AHEAD AND GOT MY COOKIE SHEETS LINED IN PARCHMENT PAPER..


THEN SIFT THE FLOUR IN A LARGE BOWL


THEN THE COCOA IN THE SWIFTER GOING INTO THE SAME BOWL..


THEN THE BAKING POWDER AND SALT..


AS YOU CAN SEE THE SIFTER MAKES SURE THERE ARE NO CLUMPS AND LIGHTENS IT ALL UP!


NOW SIT IT ASIDE!



USE A MIXER WITH A PADDLE ATTACHMENT ( HOWEVER A NORMAL HAND HELD MIXER WILL WORK BUT IT WILL TAKE LONGER..)




NEXT ADD YOUR BROWN SUGAR IN THE MIXING BOWL


WITH THE SOFTENED BUTTER


AND YOU WOULD NORMALLY ADD THE VANILLA EXTRACT BUT I AM TAKING THIS VANILLA BEAN AND..


CUTTING IT DOWN THE MIDDLE


AND SCRAPING OUT THE VANILLA BEANS


AND ADDING IT TO THE MIXING BOWL


THEN BREAK ONE EGG IN AND MIX FOR A SECOND


THEN ADD THE OTHER EGG



MIX ON HIGH FOR ABOUT 3 MINUTES

UNTIL ITS SMOOTH


AND DONT FORGET TO TURN IT DOWN AND SCRAPE THE SIDES



THEN ADD THE CHOCOLATE TO THE MIXER


AND AGAIN MIX ON HIGH


UNTIL IT ALL STARTS TO COME TOGETHER..


YOU WILL WANT TO SCRAPE THE SIDES AGAIN..


AND THEN START ADDING THE FLOUR A LITTLE AT A TIME WHILE


SWITCHING IT TO THE MILK..




THEN BACK TO THE FLOUR




AND THE MILK AGAIN


AND MIX WELL


THEN TAKE A LONG PIECE OF CLEAR WRAP AND LAY IT OUT..DUMP THE MIXTURE IN THE MIDDLE AND WRAP IT UP..I LIKE TO SHAPE IT..

IN A RECTANGLE AND CHILL FOR 2 HRS..



AFTER THE DOUGH HAS CHILLED FOR 2 HRS MIX THE CONFECTIONERS SUGAR AND GRANULATED SUGAR TOGETHER


TAKE A SMALL SCOOP AND FORM THE COOKIES.. YOU CAN ALSO USE A SMALL SPOON AND ROLL THEM AROUND IN YOUR HAND TO FORM A ROUND BALL..


THEN COAT THEM COMPLETELY IN THE SUGAR MIX AND PUT ON COOKIE SHEET 2 INCHES APART..

AND BAKE FOR 10-12 MINUTES AT 400..

THEY WILL CRACK APART ON THEIR OWN..


AND HERE THEY ARE!!

THESE ARE SOME OF THE BEST COOKIES EVER!
