LAST NIGHT FOR DINNER WE ENJOYED...
MEXICAN QUESADILLA AND RE FRIED BEANS..
MICHAEL PICKED IT OUT..AND IT WAS SUPER GOOD!!
BASICALLY THIS IS ALL I USED..
TORTIAS
CHICKEN
TACO SEASONING
RE FRIED BEANS
LETTUCE
DICED TOMATOES
ONION
GUACAMOLE
CHEESE
I JUST CUT UP THE CHICKEN ( REMEMBER TO USE A PLASTIC CUTTING BOARD AND NOT A WOOD BOARD BECAUSE WOOD ABSORBS AND RAW CHICKEN IS THE LAST THING YOU WANT IN YOUR WOOD CUTTING BOARD) ALONG WITH SOME DICED ONIONS..
ADD THE TACO SEASONING WITH ABOUT 1/2 OF WATER ONCE THE CHICKEN IS DONE...
THEN..
I SPREAD OUT THE RE FRIED BEANS ON A PLATE...
AND STARTED MAKING THE QUESADILLAS.
ADD YOUR MIXTURE TO A SOFT TORTIA TOP IT WITH CHEESE AND ADD ANOTHER TORTIA..
SINCE THEY WERE LARGE I PUT THEM ON THE GRIDDLE AND USED MY BACON PRESS TO WEIGHT IT DOWN..AFTER A COUPLE MINUTES CAREFULLY FLIP IT AND LET IT BROWN ON THE OTHER SIDE..
ONCE IT WAS BROWNED AND THE CHEESE WAS MELTED I PLACED IT ON A CUTTING BOARD AND USED A PIZZA CUTTER TO CUT IT IN TRIANGLES.
THEN I ADDED CHEESE TO THE RE FRIED BEANS
AND POPPED IT IN THE MICROWAVE FOR ABOUT 2 MINUTES..
I FINISHED THE QUESADILLAS AND PLATED IT ALL UP..
AND GOT IT ON THE TABLE. SCOTT WAS SUPPOSE TO SET THE TABLE AND AS YOU CAN TELL HE WAS RUNNING A LITTLE BEHIND!
