LAST NIGHT WE ENJOYED A BIG POT OF....

CHICKEN AND DUMPLINGS..

~ I DIDNT TAKE A LOT OF PICTURES BECAUSE I WASNT FEELING TOO GOOD BUT I WILL TRY MY BEST TO TELL YOU HOW I MAKE THEM..~



THE NIGHT BEFORE I DECIDED TO ROAST THE CHICKEN SO IT WOULD BE EASIER TO PULL APART COLD THE DAY WHEN I WAS MAKING IT.. LOOKING BACK, IT WAS NOT SUCH A GOOD IDEA BEING I DIDNT HAVE HOME MADE CHICKEN STOCK FOR THE DUMPLINGS..BUT IT WORKED OUT FINE BECAUSE OF PRE MADE CHICKEN BROTH...



IN THE OVEN IT WENT.. I JUST TOSSED A FEW SEASONINGS ON THE SKIN AND INSIDE.. I DIDNT DO MUCH TO IT BEING WE WERE JUST USING THE MEAT..NOT THE SKIN..

AFTER IT WAS DONE COOKING, I LET IT COOL AND PUT IT IN THE FRIG OVER NIGHT..

THE NEXT DAY, I SHREDDED IT...I CHOPPED UP 2 BIG CARROTS, A ONION, AND 1 STALK OF CELERY. THEN I TOOK A HUGE CAN OF CHICKEN STOCK AND POURED IT IN A BIG STOCK POT AND ADDED THE CHICKEN AND VEGGIES..THEN I ADDED 2 BIG CANS OF CREAM OF CHICKEN AND STIRRED.. I COOKED IT UNTIL THE VEGGIES WERE TENDER AND THEN I THICKENED IT UP A BIT WITH SOME CORN STARCH.. I ABOUT 1/2 CUP OF CORN STARCH IN A BOWL ADDED SOME OF THE BROTH MIXED IT UP TILL IT WAS CREAMY AND POURED IT IN THE POT...THEN I LET IT COOK A BIT LONGER WHILE I CUT UP 1 CAN OF PRE MADE BISCUITS. I TAKE 1 BISCUIT AND CUT IT IN 1/4...( 4 PIECES) AND THEN I DROPPED THEM IN THE POT ONE BY ONE...THEN I HAD..



CHICKEN AND DUMPLINGS COOKING AWAY...

I LET IT CONTINUE TO COOK FOR ABOUT 45 MINUTES TO ENSURE THE BISCUITS WERE COOKED..



AND HERE IS THE FINISHED PRODUCT...



SCOTT SERVED UP THE PLATES. I WOULD NORMALLY SERVE THIS IN A HUGE BOWL BUT HE WAS THINKING ABOUT THAT..

HE WAS IN A HURRY TO EAT..

EVEN THOUGH IT DID HAVE DUMPLINGS I SERVED IT WITH WARM FRENCH BREAD. AND IT WENT GREAT WITH DINNER..

NOW I KNOW I MIGHT HERE SOME CRAP ABOUT THE DUMPLINGS BUT BISCUITS MAKE GREAT DUMPLINGS..IF YOU HAVENT TRIED IT, YOU SHOULD..I DONT MIND MAKING THEM BY SCRATCH BUT I WAS FEELING SO BAD THAT I JUST WANTED TO GET THIS MADE AS FAST AND EASY AS POSSIBLE!!

IT WAS A GREAT DINNER!!

THE GUYS LOVED IT!!
