WHATS ON THE MENU..

SUNDAY EVENING WE WERE HAVING A FRIEND OVER FOR DINNER AND I WANTED TO FIX SOMETHING EASY YET COMFORTING SO I DECIDED UPON...

ROASTED CHICKEN WITH POTATOES, CARROTS AND ONIONS..SERVED WITH PEAS AND ROASTED GARLIC FOR THE BREAD..



THIS IS BASICALLY EVERYTHING FOR DINNER WITH THE EXCEPTION OF THE PEAS AND BREAD..AND DESERT OF COURSE!


IN A BIG DEEP PAN I PUT THE POTATOES THAT I  CUT IN HALF IN THE BOTTOM..I LIKE TO HAVE THEM CUT SIDE UP SO THE JUICE FROM THE CHICKEN GOES RIGHT INTO THEM..


I THEN CUT UP THE ONION AND ADDED IT ALONG WITH THE CARROTS ON TOP OF THE POTATOES..


THEN AFTER I RINSED THE CHICKEN OFF REALLY WELL..I SAT IT ON TOP OF THE VEGETABLES. 


THEN I PATTED THE CHICKEN DRY..IF YOU DONT IT WILL NOT BROWN..

I ADDED SOME GARLIC IN WITH THE VEGETABLES..I DIDNT EVEN PEEL IT.. NO NEED TO..


I THEN RUBBED THE CHICKEN WITH BUTTER AND ADDED SPICES ALONG WITH SALT AND PEPPER...THE SPICES I USED WAS HERB POULTRY SEASONING..REALLY SIMPLE..


IN THE OVEN IT WENT..


THEN I GOT THE GARLIC READY TO RAOST..YOU JUST CUT THE TOP OFF THE GARLIC EXPOSING ALL THE CLOVES..


DRIZZLE WITH OLIVE OIL..


AND SALT..


WRAP UP...


AND PLACE ON TOP RACK OF OVEN.. BE SURE TO BASTE THE CHICKEN AS IT COOKS.. I HAD IT ON 400..AND IT TOOK ABOUT 3 HRS.. THERE IS DIRECTIONS ON THE PACKAGE FOR ROASTING TEMPERATURES AND TIMES. 

IN THE MEAN TIME I SAT THE TABLE, WARMED THE PEAS AND BREAD WHILE THE OVEN DID EVERYTHING ELSE..


WHEN THE CHICKEN WAS DONE, I PUT IT ON A PLATTER, PUT THE VEGGIES AROUND IT AND DINNER WAS DONE..


I REMOVED THE GARLIC FROM THE FOIL AND PUT IT ON EACH PLATE AND CALLED THE BOYS TO EAT..

SORRY THERE IS NO PICTURE OF THE FINISHED MEAL ON THE PLATE. I CARVED THE CHICKEN UP STARTING WITH THE BREAST AND WE ALL SERVED OURSELVES.. 

SOME HOW THE LAST PICTURE WAS DELETED BUT I THINK YOU CAN STILL GET THE IDEA FROM ALL THE PICTURES ABOVE!

IT WAS A GREAT DINNER! SUPER EASY AND SUPER COMFORTING!
