WHATS ON THE MENU

ON MONDAY AND THURSDAYS WE DONT COOK MUCH AROUND MY HOUSE. SCOTT WORKS LATE ON THOSE NIGHTS AND ITS REALLY JUST MUNCHIE FOOD!

FOR DINNER TONIGHT WE HAD..

FRIED GREEN TOMATOES AND BRUSCHETTA... BOTH THINGS ARE REALLY SIMPLE..



FOR THE FRIED GREEN TOMATOES, JUST SLICE, DIP THEM IN EGG AND THEN IN CORNMEAL AND FRY IN SHALLOW SKILLET OF OIL TILL GOLDEN BROWN. I LIKE TO SERVE THEM WITH RANCH MIXED WITH A LITTLE HORSERADDISH.


FOR THE BRUSCHETTA..JUST SLICE SOME FRENCH BREAD, DRIZZLE SOME OLIVE OIL ON IT...BROWN UNDER THE BROILER THEN TAKE SOME GARLIC AND RUB EACH PIECE WITH IT. NEXT TAKE SOME TOTATOES AND ONIONS AND TOP THE BREAD. I ALSO TAKE SOME FRESH BASIL, CHOP IT UP AND ADD IT TO THE TOMATOES..THEN GRATE SOME MOZZARELLA.

THIS DISH IS MUCH BETTER IN THE SUMMER WHEN YOU CAN GET FRESH TOMATOES AND FRESH BASIL.

SO THIS IS A FARM STAND DINNER FOR SURE!!
