LAST NIGHT SCOTT SLEPT THROUGH DINNER LEAVING ME TO FIX WHAT I WANTED...

LINGUINE FINI IN WITH PANCETTA IN BROWNED BUTTER AND PARMESAN..

DINNER FOR ONE!



BESIDES THE PARSLEY AND GARLIC BREAD, THIS IS ALL YOU WILL NEED..ANY KIND OF PASTA WILL WORK..( THIS TIME I WANTED TO USE LINGUINE FINI BECAUSE I WANTED TO USE IT UP), SOME PRE DICED PANCETTA, AND A STICK OF BUTTER..



FIRST THINGS FIRST..GET YOUR WATER BOILING, ADD SALT, AND DROP YOUR PASTA..


IN A SEPARATE SKILLET BROWN UP THE PANCETTA..



WHEN ITS DONE, DRAIN IT IN A BOWL WITH A PAPER TOWEL..



ADD THE BUTTER TO THE SAME SKILLET..


ITS GOING TO FROTH ALL UP BUT ITS NOT READY..KEEP WAITING UNTIL...


MOST OF THE BUBBLES ARE GONE..BE CAREFUL AT THIS POINT BECAUSE THE BUTTER WILL BURN..SO BE SURE TO TURN THE HEAT OFF!!


ADD YOUR PASTA RIGHT INTO THE SKILLET WITH THE BUTTER..SOME OF THE PASTA WATER HELPS MAKE THE SAUCE THICKER..



ADD BACK THE PANCETTA



THEN ADD SOME FRESHLY GRATED PARMESAN CHEESE



AND MIX..



I LOVE THIS MEAL SOOO MUCH!

I KNOW I HAVE PUT UP OTHER POST RE THIS MEAL BUT YOU CAN CHANGE IT UP IN SO MANY WAYS!
