LAST NIGHT WE HAD A REALLY GOOD DINNER...IT WAS PRETTY SIMPLE YET VERY VERY GOOD...
TALIPA FILLETS, SCALLOPS, ROASTED POTAOTES, AND ASPARAGUS..
FROM BACK LEFT TO RIGHT...
THE BOTTLE IN THE BACK IS McCORMICK LEMON BUTER DILL SEAFOOD SAUCE, RED POTATOES, SCALLOPS, ASPARAGUS, AND TALIPA FILLETS..BESIDES SALT AND PEPPER, OILIVE OIL, AND DRIED ROSEMARY AND A LITTLE BUTTER THATS ABOUT IT..
RINSE THE SCALLOPS
BE SURE TO PAT THEM DRY..IF YOU DONT THEY WILL STEAM AS YOU COOK THEM NOT BROWN..SO THIS IS VERY IMPORTANT!! THEY ARE A LITTLE STICKY BUT PAT THEM DRY IN A PAPER TOWEL..I THEN LAY THEM ON A PAPER PLATE TO ASORB ANY ADDITIONAL MOISTURE WHILE I AM WAITING TO COOK THEM.
I PUT THE TALIPA FILLETS IN A SHALLOW PAN TO BAKE..I COVERED IT IN THE LEMON BUTTER DILL SAUCE OVER THE TOP OF IT. AND IN THE OVEN IT WENT WITH THE POTATOES AT 450.. THE FISH SHOULD ONLY TAKE ABOUT 15 MINUTES OR SO TO COOK..
SORRY THIS PICTURE IS TURNED AROUND THE WRONG WAY...I DIDNT EVEN NOTICE TILL AFTER I UPLOADED IT! BUT FOR THE POTATOES I JUST QUARTED THEM, ADDED SOME OLIVE OIL, SALT AND PEPPER, A LITTLE GARLIC AND SOME DRIED ROSEMARY AND IN THE OVEN THEY WENT AT 450 DEGREES.
IN MY GRILL PAN I ADDED OIL OIL AND BUTTER AND TOSSED IN THE ASPARAGUS.
IN A REALLY REALLY HOT NON STICK PAN I ADDED THE SAME AS ABOVE..BUTTER AND OIL OIL AND THEN ADDED THE SCALLOPS. DO NOT OVER CROWD THE PAN AND LEAVE THEM ALONE FOR A COUPLE MINUTES AFTER YOU PUT THEM IN. YOU WANT TO LET THEM GET CARMALIZED.
LIKE THIS! TURN THEM OVER AFTER THEY HAVE A GOOD COLOR ON THEM AND ALLOW THEM TO COOK 2-3 MINUTES ON THE OTHER SIDE!
WHEN THE SCALLOPS WERE ALMOST DONE I BRUSHED SOME OF THE LEMON BUTTER DILL SAUCE ON THEM.
AFTER ABOUT 15-20 MINUTES BOTH THE FISH AND POTATOES WERE DONE. I NORMALLY DONT BAKE FISH BUT TALIPA IS SO TENDER THAT IT FALLS APART EASY IF YOU ARE GRILLING IT..BUT THIS ALREADY LOOKS PRETTY GOOD. ITS DONE WHEN THE FISH IS FLAKEY..
AND HERE WAS WHAT IT ALL LOOKED LIKE PLATED UP!!
THIS DINNER WAS SOOOOOOO GOOD! I LOVE IT! SCOTT LOVED IT TOO. THE LEMON BUTTER DILL SAUCE WAS BEYOND GOOD ON THE SEAFOOD!
THIS WAS A HEALTHY, QUICK AND EASY MEAL.. IT DID COST A LITTLE MORE FOR THE FRESH SEAFOOD BUT YOU COULD ALWAYS USE FROZEN AND IT WOULD BE CHEAPER. BUT PERSONALLY I PREFER FRESH TO FROZEN AND DONT MIND PAYING THE EXTRA BECAUSE THE TASTE IS MUCH BETTER!
YOU SHOULD GIVE THIS A TRY. I DONT EVEN LIKE FISH A LOT BUT THIS WAS A GREAT DINNER!
