CEDAR PLANK GRILLED SALMON WITH ROASTED RED POTATOES AND ASPARAGUS

THE OTHER NIGHT I MADE SALMON ON CEDAR PLANKS ON THE GRILL OUTSIDE. IT WAS THE DAY WE PICKED BRITTANY UP FROM THE AIRPORT..SO I WAS LOOKING TO FIND SOMETHING FAST AND EASY..

THE CEDAR PLANKS COME DOUBLE THE SIZE OF THESE. BUT WHEN I GOT THEM AT THE HARDWARE STORE, I ASKED THEM TO CUT THEM FOR ME SO I WOULD HAVE 8 PLANKS OUT OF 4 PLANKS.. YOU CAN REUSE THEM IF THEY ARE NOT TOO CHARRED AND IF YOU WASH IT REALLY WELL.

I SOAKED THEM FOR ABOUT 30 MINUTES BEFORE USING THEM. IT REALLY SHOULD HAVE BEEN A LITTLE LONGER BUT I WAS IN A HURRY SO I JUST WENT WITH IT..


I BRUSHED OLIVE OIL, DIJON MUSTARD AND SPRINKLED BROWN SUGAR ON TOP OF THE SALMON THEN PUT THEM ON THE PLANKS, AND ON THE GRILL THEY WENT..



AFTER ABOUT 15 - 20 MINUTES THEY WERE LOOKING PRETTY GOOD! REMEMBER TO HAVE A WATER BOTTLE CLOSE INCASE THE PLANKS CATCH ON FIRE..( WHICH MINE DID)...BUT IT DIDNT HURT THE SALMON AT ALL.



TO SERVE THEM 2 PLATES IS NORMAL. I LIKE TO KEEP THE SALMON ON THE PLANK..BUT BEING WE HAVE NO DISHWASHER BESIDES ME, I DECIDED TO JUST SIT THE PLANKS ON SOME FOIL NEXT TO THE PLATE..AND IT WORKED FINE..I SERVED IT WITH ROASTED RED POTATOES AND ASPARAGUS. I LOVED IT.. I DONT EVEN LIKE FISH THAT MUCH AND I LOVE THIS MEAL.. ITS A GREAT MEAL IN THE SUMMER OUT ON THE GRILL OR IN THE WINTER IN THE OVEN. SORRY I DIDNT GET THE PICTURE OF THE POTATOES AND VEGGIES..I GUESS I WAS JUST IN A HURRY! I WANTED TO GET THIS UP SOONER BUT TIME HAS NOT BEEN MY FRIEND!
