With the colder months here, I cook more stews and comforting foods because nothing feels as good as a cozy night in, with a big bowl of stew in front of the fireplace. My beef stew is pretty easy and pretty similar to the Jaggers Family Pot Roast but not exactly the same!
Here's how I do it!
Remember.. I take a lot of pictures, but the steps are really easy!
Jaggers Family Winter Beef Stew
I kinda had 3 stations in the kitchens..
The veggies..
Spices
I am using Garlic Powder, 1 bay leaf, some Tyme, salt and pepper, and brown gravy mix.
and meat area..
I decided to make A LOT of stew..
so I was browning the meat in the non stick pot and will be transferring it to the larger pot.
First thing I did was take some vegetable oil and warmed it up..
I then dusted the stew meat in just some plain ap flour.
I did it in batches
While it was cooking I got busy with the vegetables.
Now I am making a lot but if you are just making a small amount, 4 or 5 potatoes would work and just a couple carrots.. I I think I did more like 10 small white potatoes.. medium dice about 5 large carrots .. medium dice.
I kept
cooking the stew meat in batches while chopping up the veggies..
and transferring into the larger pot.
I then took 1 large soft ball sized onion and did a medium dice on it too. I also peeled 5 fresh pieces of garlic.. but left those whole.
Once the stew meat was done..
I added 2 cans of Hunt's Fire Roasted Diced Tomatoes
and added them to the pot.
Again just use 1 can if you are making a smaller amount.
Stir..
Then add in all the cut up vegetables.
and stir really well.
Then I added almost a full box of beef stock.. You just want to add enough where you can see it through the meat and veggies.
Then I cheat a little bit.
I add 1 packet of brown gravy mix and it really really gives the stew a great flavor.
Mix it up..
Then add one bay leaf..
a tablespoon of thyme, garlic powder ( yes I use both kinds of garlic ) and a teaspoon of salt and pepper.
Right on top of that I added a bowl of frozen peas.
Mix really well..
Then it goes into a 350 degree oven..
and cooks for 1 hour.. Then turn the heat down to 250 and let cook an additional 1 1/2 - 2 hours.
After its cooked for the first hour..
I stir it up.. and see if I want to thicken it with more brown gravy mix.. I like a thicker stew so I added 2 more gravy packets but if you are making less 1 or 2 should be enough.
And
Dinner was served.
I also baked some flaky
biscuits to go with it. .
and this dinner for 3 was amazing and for the first time we ate at the kitchen table instead of dining room. Kinda liked it!
I love love love this beef stew!!
The guys ate it up and we have plenty for left overs!
This is the perfect dinner for any home on a cold night!
