Recipe : Pumpkin Chocolate Chip Muffins

Sunday, September 9, 2012

I recently found this recipe online and can't wait to try it! I thought I would share it with you guys in case this looks like something you would like to try as fall approaches!

 Pumpkin Chocolate Chip Muffins Ingredients:
1 2/3 c. all-purpose flour
1 c. sugar
1 T. pumpkin pie spice
1 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
2 lg. eggs
1 c. plain pumpkin
1/2 c. butter, melted
1 c. chocolate chips

Heat oven to 350 degrees. Grease muffin cups, or use foil or paper baking cups. Thoroughly mix flour, sugar, pumpkin pie spice, baking soda, baking powder and salt in a large bowl. Break eggs into another bowl. Add pumpkin and butter, and whisk until well blended. Stir in chocolate chips. Pour over dry ingredients and fold in with a rubber spatula just until dry ingredients are moistened. Pour into muffin cups. Bake for 20 to 25 minutes. And you could always frost these with a cream cheese frosting for a little extra sweetness!
I will do a step by step post or video of these when I get around to making them!
Happy Sunday
